Description

A comforting dessert made with chewy sago pearls, infused with coconut and fragrant pandan for a delightful family treat.


Ingredients

Scale
  • 1.8 oz true sago pearls
  • 1 1/2 cups water (or 2 cups if using pandan leaf)
  • 3 tablespoons sugar
  • 1/2 pandan leaf (optional)
  • 1/2 cup young coconut meat, julienned (optional)
  • 1/2 cup coconut milk
  • 1/8 teaspoon table salt

Instructions

  1. Prepare the pandan leaf (if using) by tying it into a knot and boiling it in 2 cups of water for 3 minutes.
  2. Add the sago pearls gradually while stirring to prevent clumping, stirring constantly for 1 1/2 to 2 minutes until most pearls turn translucent.
  3. Adjust consistency by adding more water if the mixture is too thick.
  4. Sweeten the mixture by turning off the heat and adding sugar and julienned young coconut meat (if using), stirring until dissolved.
  5. Make the salted coconut milk by simmering coconut milk and salt in a separate pot until dissolved.
  6. Serve warm sago pudding in bowls, topped with salted coconut milk to taste.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be prepared ahead of time without the coconut milk until ready to serve.
