Description
A comforting dessert made with chewy sago pearls, infused with coconut and fragrant pandan for a delightful family treat.
Ingredients

- 1.8 oz true sago pearls
- 1 1/2 cups water (or 2 cups if using pandan leaf)
- 3 tablespoons sugar
- 1/2 pandan leaf (optional)
- 1/2 cup young coconut meat, julienned (optional)
- 1/2 cup coconut milk
- 1/8 teaspoon table salt
Instructions
- Prepare the pandan leaf (if using) by tying it into a knot and boiling it in 2 cups of water for 3 minutes.
- Add the sago pearls gradually while stirring to prevent clumping, stirring constantly for 1 1/2 to 2 minutes until most pearls turn translucent.
- Adjust consistency by adding more water if the mixture is too thick.
- Sweeten the mixture by turning off the heat and adding sugar and julienned young coconut meat (if using), stirring until dissolved.
- Make the salted coconut milk by simmering coconut milk and salt in a separate pot until dissolved.
- Serve warm sago pudding in bowls, topped with salted coconut milk to taste.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can be prepared ahead of time without the coconut milk until ready to serve.
