Description

A simple yet vibrant raw carrot salad that highlights the natural sweetness of carrots with a zesty dressing and fresh herbs.


Ingredients

  • 3 large carrots, peeled and trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon agave or maple syrup
  • 1/2 teaspoon ground coriander
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon kosher salt
  • 2 tablespoons chopped parsley
  • 2 teaspoons sesame seeds
  • Optional: 1 tablespoon chopped cilantro or mint

Instructions

  1. Wash and trim the carrots. Shred or julienne them using a food processor or a grater.
  2. In a small bowl, whisk together olive oil, lime juice, apple cider vinegar, agave, ground coriander, cayenne pepper, and kosher salt.
  3. In a large mixing bowl, combine the shredded carrots, chopped parsley, sesame seeds, and optional herbs.
  4. Dress the salad with the dressing and toss gently. Let it sit for a few minutes to meld the flavors.
  5. Serve in a colorful bowl or platter. Store leftovers in an airtight container in the fridge for up to 2 days.

Notes
