- 3 large carrots, peeled and trimmed
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon apple cider vinegar
- 1 teaspoon agave or maple syrup
- 1/2 teaspoon ground coriander
- 1/8 teaspoon cayenne pepper (optional)
- 1/4 teaspoon kosher salt
- 2 tablespoons chopped parsley
- 2 teaspoons sesame seeds
- Optional: 1 tablespoon chopped cilantro or mint
Instructions
- Wash and trim the carrots. Shred or julienne them using a food processor or a grater.
- In a small bowl, whisk together olive oil, lime juice, apple cider vinegar, agave, ground coriander, cayenne pepper, and kosher salt.
- In a large mixing bowl, combine the shredded carrots, chopped parsley, sesame seeds, and optional herbs.
- Dress the salad with the dressing and toss gently. Let it sit for a few minutes to meld the flavors.
- Serve in a colorful bowl or platter. Store leftovers in an airtight container in the fridge for up to 2 days.
Notes
For a creamier flavor, consider adding tahini to the dressing. Avoid overdressing the salad too early.
