- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 1/2 cup light brown sugar, packed
- 1/4 teaspoon baking soda
- 1/8 teaspoon kosher salt
- 1/2 cup unsalted butter, melted
- 3/4 cup raspberry jam
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Line an 8 by 8-inch baking dish with parchment paper.
- Combine in a medium bowl: 1 cup all-purpose flour, 1 cup old-fashioned oats, 1/2 cup light brown sugar, 1/4 teaspoon baking soda, and 1/8 teaspoon kosher salt.
- Add the 1/2 cup melted unsalted butter over your dry ingredients and stir until crumbly.
- Press about 2/3 of the mixture firmly into the bottom of the lined baking dish.
- Spread 3/4 cup raspberry jam evenly over the oat mixture.
- Crumble the remaining oat mixture over the jam.
- Bake for 30 to 35 minutes until edges are golden brown.
- Cool in the pan before transferring to a wire rack.
- Slice into squares and serve.
Notes
For a richer flavor, consider browning the butter before adding it to the mix. Store bars in an airtight container for up to 3 days at room temperature or in the fridge for 1 week.
