Description

Delicious layered dessert with a crumbly oat topping and sweet-tart raspberry jam filling, perfect for family gatherings and cozy nights.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon kosher salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup raspberry jam

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Line an 8 by 8-inch baking dish with parchment paper.
  3. Combine in a medium bowl: 1 cup all-purpose flour, 1 cup old-fashioned oats, 1/2 cup light brown sugar, 1/4 teaspoon baking soda, and 1/8 teaspoon kosher salt.
  4. Add the 1/2 cup melted unsalted butter over your dry ingredients and stir until crumbly.
  5. Press about 2/3 of the mixture firmly into the bottom of the lined baking dish.
  6. Spread 3/4 cup raspberry jam evenly over the oat mixture.
  7. Crumble the remaining oat mixture over the jam.
  8. Bake for 30 to 35 minutes until edges are golden brown.
  9. Cool in the pan before transferring to a wire rack.
  10. Slice into squares and serve.

Notes

For a richer flavor, consider browning the butter before adding it to the mix. Store bars in an airtight container for up to 3 days at room temperature or in the fridge for 1 week.
