Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 12 ounces fresh or frozen raspberries
  • 1/4 cup granulated sugar (for filling)
  • 2 tablespoons fresh lemon juice (for filling)
  • 1 1/2 cups granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 4 large eggs, room temperature
  • 2/3 cup freshly squeezed lemon juice
  • Confectioners’ sugar, for dusting

Instructions

  1. Prepare the Raspberry Sauce: In a medium saucepan over medium heat, combine raspberries, 1/4 cup granulated sugar, and 2 tablespoons lemon juice. Bring to a boil, stirring often, and cook for 8-10 minutes until thickened. Strain the mixture to remove seeds and let cool.
  2. Preheat the Oven: Set your oven to 350°F (175°C).
  3. Make the Crust: In a medium bowl, blend butter, 2 cups flour, and 1/2 cup sugar until fine crumbs form. Press mixture evenly into the bottom of a greased 9×13 inch baking dish. Bake for 15-20 minutes until golden brown.
  4. Prepare the Filling: In a large bowl, mix together 1 1/2 cups sugar, 1/4 cup flour, eggs, 2/3 cup lemon juice, and cooled raspberry sauce until smooth.
  5. Bake the Bars: Pour filling over the baked crust and return to the oven. Bake for an additional 20-25 minutes until filling is set but slightly jiggly in the center.
  6. Cooling Time: Allow bars to cool in the baking dish then chill for 2 hours in the fridge. Dust with confectioners’ sugar before cutting into squares.

Notes

Use fresh raspberries for best flavor, but frozen can be used. Chill the bars for better presentation when cutting.
