- 4 Corn Tortillas
- 4 Large Eggs
- 1 cup Black Beans, rinsed and drained
- 1 cup Salsa
- 1 Avocado, sliced
- Fresh Cilantro, for garnish
- Hot Sauce, to taste
- Salt and Pepper, to taste
- Olive Oil
Instructions
- Heat a heavy-bottomed cast iron skillet over medium heat. Add a drizzle of olive oil.
- Fry each corn tortilla for about 1-2 minutes on each side until golden and crisp. Remove and set aside.
- Cook the eggs in the same skillet to your liking.
- Warm the black beans in a separate saucepan, seasoning with salt and pepper to taste.
- Assemble the dish by placing one tortilla on a plate, adding warm black beans, and topping with a cooked egg.
- Add salsa, avocado slices, and fresh cilantro on top.
- Season with hot sauce, salt, and pepper, and serve warm. Enjoy!
