Description

A flavorful Mexican-inspired breakfast delight combining crispy corn tortillas, creamy eggs, and well-seasoned black beans.


Ingredients

  • 4 Corn Tortillas
  • 4 Large Eggs
  • 1 cup Black Beans, rinsed and drained
  • 1 cup Salsa
  • 1 Avocado, sliced
  • Fresh Cilantro, for garnish
  • Hot Sauce, to taste
  • Salt and Pepper, to taste
  • Olive Oil

Instructions

  1. Heat a heavy-bottomed cast iron skillet over medium heat. Add a drizzle of olive oil.
  2. Fry each corn tortilla for about 1-2 minutes on each side until golden and crisp. Remove and set aside.
  3. Cook the eggs in the same skillet to your liking.
  4. Warm the black beans in a separate saucepan, seasoning with salt and pepper to taste.
  5. Assemble the dish by placing one tortilla on a plate, adding warm black beans, and topping with a cooked egg.
  6. Add salsa, avocado slices, and fresh cilantro on top.
  7. Season with hot sauce, salt, and pepper, and serve warm. Enjoy!
