Ingredients

  • 1 cup Sweet Rice Flour (Mochiko)
  • ½ cup Sugar
  • 1 cup Water
  • Cornstarch (for dusting)
  • Your favorite Ice Cream flavors

Instructions

  1. Prep Your Workspace: Dust your surface with cornstarch to avoid any sticky incidents.
  2. Combine 1 cup of sweet rice flour, ½ cup sugar, and 1 cup water in a microwave-safe bowl. Whisk until smooth and creamy.
  3. Cover it with a damp towel and microwave for 1 minute. Stir and microwave for another minute, then stir again, and for the final minute, cover and microwave.
  4. Let it cool slightly. Dust your hands with cornstarch and scoop out a tablespoon of mochi. Flatten it in your palm.
  5. Place a small ball of softened ice cream in the center and wrap the mochi around it, pinching to seal.
  6. Roll it gently in the cornstarch to prevent sticking.
  7. Repeat until all ice cream is enveloped in mochi.
  8. Freeze Your Creation: Place them in the freezer for at least 2 hours, allowing them to firm up.

Notes

Use high-quality sweet rice flour and ice cream for the best texture and flavor. Store in an airtight container in the freezer.
