- 1 cup Sweet Rice Flour (Mochiko)
- ½ cup Sugar
- 1 cup Water
- Cornstarch (for dusting)
- Your favorite Ice Cream flavors
Instructions
- Prep Your Workspace: Dust your surface with cornstarch to avoid any sticky incidents.
- Combine 1 cup of sweet rice flour, ½ cup sugar, and 1 cup water in a microwave-safe bowl. Whisk until smooth and creamy.
- Cover it with a damp towel and microwave for 1 minute. Stir and microwave for another minute, then stir again, and for the final minute, cover and microwave.
- Let it cool slightly. Dust your hands with cornstarch and scoop out a tablespoon of mochi. Flatten it in your palm.
- Place a small ball of softened ice cream in the center and wrap the mochi around it, pinching to seal.
- Roll it gently in the cornstarch to prevent sticking.
- Repeat until all ice cream is enveloped in mochi.
- Freeze Your Creation: Place them in the freezer for at least 2 hours, allowing them to firm up.
Notes
Use high-quality sweet rice flour and ice cream for the best texture and flavor. Store in an airtight container in the freezer.
