- ½ cup Sugar
- 1 cup Water
- Cornstarch (for dusting)
- Your favorite Ice Cream (e.g., Häagen-Dazs or Ben & Jerry’s)
Instructions
- Prep your workspace by dusting it with cornstarch.
- In a microwave-safe bowl, combine the sweet rice flour, sugar, and water.
- Whisk until smooth and creamy.
- Cover it with a damp towel and microwave for 1 minute.
- Stir and microwave for another minute, then stir again.
- For the final minute, cover and microwave until it has a translucent appearance.
- Let it cool slightly.
- Dust your hands with cornstarch and scoop out a tablespoon of mochi.
- Flatten it in your palm, add softened ice cream in the center, and wrap the mochi around it.
- Pinch to seal and roll it gently in cornstarch.
- Repeat until all ice cream is enveloped in mochi.
- Place them in the freezer for at least 2 hours to firm up.
Notes
Don’t overheat the mochi to avoid a rubbery texture! Store individual pieces in airtight containers to keep them fresh.
