Ingredients

  • 1 cup Sweet Rice Flour (Mochiko)
  • ½ cup Sugar
  • 1 cup Water
  • Cornstarch (for dusting)
  • Your favorite Ice Cream (e.g., Häagen-Dazs or Ben & Jerry’s)

Instructions

  1. Prep your workspace by dusting it with cornstarch.
  2. In a microwave-safe bowl, combine the sweet rice flour, sugar, and water.
  3. Whisk until smooth and creamy.
  4. Cover it with a damp towel and microwave for 1 minute.
  5. Stir and microwave for another minute, then stir again.
  6. For the final minute, cover and microwave until it has a translucent appearance.
  7. Let it cool slightly.
  8. Dust your hands with cornstarch and scoop out a tablespoon of mochi.
  9. Flatten it in your palm, add softened ice cream in the center, and wrap the mochi around it.
  10. Pinch to seal and roll it gently in cornstarch.
  11. Repeat until all ice cream is enveloped in mochi.
  12. Place them in the freezer for at least 2 hours to firm up.

Notes

Don’t overheat the mochi to avoid a rubbery texture! Store individual pieces in airtight containers to keep them fresh.
