A light and nourishing spinach egg casserole that’s quick to prepare and perfect for any occasion.

- 6 large eggs
- 1 cup milk
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese (cheddar, mozzarella, feta)
- 1/2 cup diced onion
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Cooking spray or butter for greasing
Instructions
- Preheat the oven to 350°F (175°C) and grease the baking dish.
- In a large bowl, whisk together eggs and milk until frothy.
- Stir in spinach, cheese, onion, salt, pepper, garlic powder, and paprika.
- Pour mixture into the prepared baking dish.
- Bake for 25-30 minutes until set and golden brown on top.
- Cool for a few minutes before slicing and serving.
Notes
For an extra fluffy casserole, separate the egg whites and yolks, whip the whites until stiff, then fold them in.
