Description

A light and nourishing spinach egg casserole that’s quick to prepare and perfect for any occasion.


Ingredients

  • 6 large eggs
  • 1 cup milk
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (cheddar, mozzarella, feta)
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Cooking spray or butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease the baking dish.
  2. In a large bowl, whisk together eggs and milk until frothy.
  3. Stir in spinach, cheese, onion, salt, pepper, garlic powder, and paprika.
  4. Pour mixture into the prepared baking dish.
  5. Bake for 25-30 minutes until set and golden brown on top.
  6. Cool for a few minutes before slicing and serving.

Notes

For an extra fluffy casserole, separate the egg whites and yolks, whip the whites until stiff, then fold them in.
