A vibrant explosion of flavor in just 30 minutes, this Quick Cauliflower Curry Stir Fry combines crispy cauliflower with coconut milk and a blend of spices for a satisfying meal.


Ingredients

  • 350g cauliflower florets
  • 1 tsp fish sauce or a pinch of salt
  • 2/3 cup coconut milk, divided
  • 2 Tbsp yellow curry paste
  • 1 tsp paprika (optional)
  • 1 1/2 Tbsp palm sugar
  • A dash fish sauce or soy sauce as needed
  • 1/4 onion, sliced thinly
  • 1/2 cup cherry tomatoes, halved
  • Chopped cilantro for garnish (optional)
  • Fried shallots (optional)

Instructions

  1. Sear the cauliflower: In a large skillet, add just enough oil to coat the bottom and turn the heat to medium-high. Add the cauliflower florets and sprinkle with the fish sauce or salt. Let it sear for about 5 minutes until they develop a beautiful golden-brown hue.
  2. Create the sauce: In a separate wok, add half of the coconut milk and bring it to a gentle boil. Stir in the curry paste and paprika (if using), and reduce the mixture until it thickens—this should take around 3-4 minutes.
  3. Blend ingredients: Once thickened, add the palm sugar and stir until dissolved. Then, pour in the remaining coconut milk. Mix well and add the onions and browned cauliflower, tossing everything until well-combined and the cauliflower is cooked through, approximately another 5-7 minutes.
  4. Finish the dish: Toss in the cherry tomatoes, heating them through (about 1-2 minutes). Taste and adjust seasoning if necessary.
  5. Serve with flair: Remove from heat, toss in chopped cilantro, and serve with fluffy jasmine rice. For an extra indulgence, top with fried shallots for that delightful crunch!
