Description

Deliciously chewy Pumpkin Magic Bars layered with sweet chocolate, coconut, and warm spices, perfect for fall gatherings.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sweetened shredded coconut
  • 1 cup chocolate chips
  • 1 can (15 oz) pumpkin puree
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a medium bowl, combine graham cracker crumbs and melted butter and mix until evenly coated. Press into the bottom of the baking dish.
  3. Sprinkle shredded coconut and chocolate chips evenly over the crust.
  4. In a separate bowl, whisk together pumpkin puree, sweetened condensed milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
  5. Pour the pumpkin mixture over the layers of coconut and chocolate chips, spreading evenly.
  6. Bake for 30-35 minutes until the edges are set and the center is firm.
  7. Allow to cool for at least 30 minutes before slicing into squares.

Notes

Store in an airtight container for up to 3 days at room temperature or 1 week in the refrigerator. You can prepare the crust a day in advance.
