- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with paper liners.
- In a large mixing bowl, whisk together pumpkin puree, vegetable oil, sugar, eggs, and vanilla until smooth.
- In a separate bowl, stir together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
- In a small bowl, beat together softened cream cheese and powdered sugar until smooth.
- Fill each muffin liner halfway with batter, top with cream cheese mixture, then add more batter until 2/3 full.
- Gently swirl the cream cheese into the muffin batter using a toothpick.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes, then transfer to a wire rack.
Notes
For best results, use room temperature cream cheese and avoid overmixing the batter.
