Delicious Pumpkin Cream Cheese Swirl Muffins that combine moist pumpkin bread with a rich, creamy cream cheese swirl, perfect for fall.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. In a large mixing bowl, whisk together pumpkin puree, vegetable oil, sugar, eggs, and vanilla until smooth.
  4. In a separate bowl, stir together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  6. In a small bowl, beat together softened cream cheese and powdered sugar until smooth.
  7. Fill each muffin liner halfway with batter, top with cream cheese mixture, then add more batter until 2/3 full.
  8. Gently swirl the cream cheese into the muffin batter using a toothpick.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool for 5 minutes, then transfer to a wire rack.

Notes

For best results, use room temperature cream cheese and avoid overmixing the batter.
