Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Add pumpkin puree, egg, and vanilla extract to the creamed mixture and mix well.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Scoop spoonfuls of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges start to firm up. Let cool completely on a wire rack.
- For the caramel frosting, melt unsalted butter in a saucepan over medium heat. Stir in brown sugar, heavy cream, vanilla extract, and salt. Cook while stirring until it thickens slightly (about 5-7 minutes).
- Once the cookies are cooled, drizzle or spread the caramel frosting on top and enjoy!
