- 1 teaspoon baking soda

- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- In separate bowl, mix sugars, pumpkin puree, oil, eggs, and vanilla until smooth.
- Gradually combine dry ingredients into wet ingredients until just mixed.
- Pour batter into prepared pan and bake 60-70 minutes until toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to wire rack to cool completely.
- For frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
- Spread frosting over cooled bread before slicing.
Notes
- Do not overmix batter to maintain tender texture
- Bread can be frozen without frosting for up to 3 months
- Store frosted bread in refrigerator for up to 1 week
- Can add nuts or chocolate chips to batter if desired
