Description

Delicious and healthy Protein Yogurt Clusters packed with flavor and nutrition, perfect for snacks or desserts.


Ingredients

Scale
  • 1 cup coconut yogurt
  • 1/4 cup sunflower seed butter (or any nut/seed butter)
  • 1/4 cup plant-based protein powder
  • 1 tsp vanilla extract
  • 1 cup chopped strawberries
  • 1 1/4 cup dark chocolate chips (85% dark mini chocolate chips)
  • 1 Tbsp coconut oil
  • Flaked salt (optional)

Instructions

  1. Mix it all together: In a large mixing bowl, combine the coconut yogurt, sunflower seed butter, protein powder, and vanilla extract until smooth and well combined.
  2. Add strawberries: Gently fold in the chopped strawberries, making sure they are evenly distributed.
  3. Shape the clusters: Using a large cookie scoop or a spoon, dollop the mixture onto a lined baking sheet, forming about 11-12 clusters.
  4. Freeze: Let the clusters chill in the freezer for at least 2 hours.
  5. Melt chocolate: In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together in 30-second increments.
  6. Dip: Take each frozen cluster and dip it into the melted chocolate, ensuring it’s fully coated.
  7. Final freeze: Pop them back into the freezer for about 30 minutes until the chocolate sets.
  8. Enjoy: Store in an airtight container in the freezer or let them thaw for 5-10 minutes before serving.

Notes

For a quicker process, use a double boiler to melt the chocolate. Store clusters in the freezer for up to 3 months.
