Description

A creamy and crunchy frozen treat made with yogurt, nut butter, and topped with chocolate and seeds.


Ingredients

Scale
  • 1 cup unsweetened coconut yogurt
  • 1/4 cup sunflower seed butter
  • 1 Tbsp maple syrup (optional)
  • 1/4 cup protein powder (pea protein recommended)
  • 2 Tbsp dark chocolate, melted
  • Slivered almonds
  • Pumpkin seeds

Instructions

  1. Prep your workspace: Line a baking sheet with parchment paper.
  2. Mix in a large mixing bowl the yogurt, sunflower seed butter, maple syrup, and protein powder until smooth.
  3. Spread the yogurt mixture onto the parchment-lined baking sheet, about 1/4 inch thick.
  4. Chocolate: Melt the dark chocolate and drizzle it over the yogurt mixture.
  5. Get crunchy by sprinkling slivered almonds and pumpkin seeds over the top.
  6. Freeze for at least 2 hours or until set.
  7. Slice into pieces and enjoy!
  8. Store leftovers in an airtight container in the freezer for up to a month.

This recipe is highly customizable; feel free to swap the nut butter or add seasonal fruits.
