Ingredients

  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup raw pecans
  • 1/2 cup raisins
  • 1/4 cup protein powder
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1 Tbsp water
  • 1 tsp vanilla extract

Instructions

  1. Blend Your Base: Start by combining all your ingredients in a food processor. Pulse them until they clump together, about 1-2 minutes, scraping the sides occasionally.
  2. Check the Consistency: If the mixture doesn’t stick, add another tablespoon of water and blend again.
  3. Roll to Perfection: Take about one tablespoon of the mixture and roll it into a ball. You should get around 13 balls.
  4. Get Fancy (Optional): Roll in shredded coconut or dip in melted white chocolate for added flair.
  5. Store: Keep in an airtight container in the fridge for up to a week or freeze for several months.

Notes

Make sure your nuts are ground finely but not turned into nut butter. Room-temperature ingredients blend better together.
