A family favorite recipe for juicy and flavorful Portuguese Grilled Chicken, marinated in a blend of spices and grilled to perfection.

- 1 whole chicken (about 3 to 4 pounds)
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 6 cloves garlic, minced
- 1 tablespoon paprika
- 1 tablespoon smoked paprika
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon fresh parsley, chopped
- 1/4 cup white wine vinegar
Instructions
- Make the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, paprika, smoked paprika, salt, black pepper, cayenne pepper (if using), fresh oregano, fresh parsley, and white wine vinegar until blended.
- Marinate the Chicken: Rub the marinade generously all over the chicken, working it under the skin and inside the cavity.
- Refrigerate: Cover the marinated chicken with plastic wrap and refrigerate for at least 2 hours, ideally overnight.
- Prepare the Grill: Preheat the grill to medium-high heat, about 375°F (190°C).
- Grill the Chicken: Place the chicken on the grill, breast side down, and grill for approximately 45 minutes to 1 hour, turning occasionally.
- Let it Rest: Remove the chicken from the grill and let it rest for about 10 minutes before carving.
Notes
Ensure your chicken is at room temperature before marinating for even absorption of flavors. Substitute lemon juice with lime juice for a different citrus twist.
