Description

These savory Portabella Mushroom Sliders feature earthy mushrooms, a sweet maple glaze, and crispy back bacon, offering a delightful Canadian twist.


Ingredients

Scale
  • 2 tbsp olive oil
  • 3 large onions (sliced into 1/8″ slices)
  • 3 tbsp maple syrup
  • 2 tbsp balsamic vinegar
  • 8 mini portabella mushrooms
  • 2 tbsp olive oil (for grilling)
  • 1 tbsp balsamic vinegar (for marinating)
  • Salt & pepper (to taste)
  • 8 slices Oka cheese
  • 8 slider buns
  • Dijon mustard
  • Mayonnaise
  • 8 slices back bacon (sliced into strips)
  • 8 bib lettuce leaves (trimmed for slider buns)

Instructions

  1. In a large skillet, heat 2 tbsp of olive oil over medium-low heat. Add sliced onions and a pinch of salt, cooking for 25-30 minutes until golden brown.
  2. While onions cook, preheat your grill or grill pan over medium heat. Brush portabella mushrooms with 2 tbsp olive oil and drizzle with 1 tbsp balsamic vinegar, seasoning with salt and pepper.
  3. Grill mushrooms stem-side up for 4-5 minutes on each side until juicy and tender.
  4. In the last minute of grilling, place a slice of Oka cheese on each mushroom to melt.
  5. In a separate skillet, cook back bacon for 3-4 minutes on each side until crispy. Drain on paper towels.
  6. To assemble sliders, start with a bottom bun, add the grilled mushroom with melted cheese, caramelized onions, crispy bacon, Dijon mustard, mayonnaise, and a crispy bib lettuce leaf. Top with the top bun.
  7. Serve hot with your favorite dipping sauce.

Notes

You can prepare the caramelized onions and bacon ahead of time. Keep leftovers in an airtight container for up to 2 days.
