Description

Porcupine Meatballs are a comforting dish featuring ground beef and rice, simmered in a savory tomato sauce, evoking nostalgic family memories.


Ingredients

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 can (15 oz) tomato sauce
  • 1 cup water
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Instructions

  1. In a large bowl, combine ground beef, rice, onion, garlic, salt, pepper, and Italian seasoning. Mix well until fully combined.
  2. Shape the mixture into golf ball-sized meatballs with wet hands.
  3. In a skillet, heat the tomato sauce and water over medium heat until simmering.
  4. Carefully place the meatballs in the simmering sauce, cover, and cook for 30-35 minutes until cooked through.
  5. Remove from heat and let sit before serving over spaghetti, rice, or mashed potatoes.
