- 3–4 boneless, skinless chicken breasts, boiled and shredded in large pieces
- ½ medium yellow onion, finely diced
- 1 (10.75 oz) can cream of chicken soup
- 16 oz sour cream
- 8 oz cream cheese, softened
- 1 tbsp poppy seeds
- ½ tsp salt
- ¼ tsp coarse ground black pepper
- ½ cup butter, melted
- 1½ sleeves Ritz or other buttery crackers, crushed
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the cream of chicken soup, sour cream, cream cheese, poppy seeds, salt, and pepper.
- Stir in the shredded chicken and finely diced onion until well coated.
- Spoon the mixture into a 9×13-inch casserole dish.
- Crush the crackers and sprinkle them evenly over the top.
- Drizzle melted butter over the cracker topping.
- Bake in the preheated oven for 25–30 minutes, until the topping is golden brown and bubbly.
- Serve warm, optionally over rice.
Notes
For a crispier topping, broil for the last couple of minutes. Allow to sit for 5-10 minutes before serving.
