Description

A comforting and creamy casserole combining tender chicken, a rich sauce, and a crunchy poppy seed topping, perfect for family gatherings.


Ingredients

  • 34 boneless, skinless chicken breasts, boiled and shredded in large pieces
  • ½ medium yellow onion, finely diced
  • 1 (10.75 oz) can cream of chicken soup
  • 16 oz sour cream
  • 8 oz cream cheese, softened
  • 1 tbsp poppy seeds
  • ½ tsp salt
  • ¼ tsp coarse ground black pepper
  • ½ cup butter, melted
  • sleeves Ritz or other buttery crackers, crushed

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the cream of chicken soup, sour cream, cream cheese, poppy seeds, salt, and pepper.
  3. Stir in the shredded chicken and finely diced onion until well coated.
  4. Spoon the mixture into a 9×13-inch casserole dish.
  5. Crush the crackers and sprinkle them evenly over the top.
  6. Drizzle melted butter over the cracker topping.
  7. Bake in the preheated oven for 25–30 minutes, until the topping is golden brown and bubbly.
  8. Serve warm, optionally over rice.

Notes

For a crispier topping, broil for the last couple of minutes. Allow to sit for 5-10 minutes before serving.
