Description
A homemade version of the iconic Popeyes Chicken Sandwich featuring crispy chicken thighs and spicy mayo on buttery brioche buns.

- 2 boneless chicken thighs
- 1 cup buttermilk
- 1 cup flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp cayenne pepper
- Salt and pepper to taste
- Vegetable oil for frying
- ½ cup mayo
- 1–2 tbsp hot sauce
- 2 buttery brioche buns
- Pickles (optional)
Instructions
- Marinate the chicken thighs in buttermilk for at least 1 hour.
- Combine flour, paprika, garlic powder, cayenne pepper, salt, and pepper in a bowl.
- Dredge the marinated chicken in the seasoned flour.
- Heat vegetable oil in a skillet until it reaches 350°F.
- Fry the chicken for about 6-8 minutes until golden brown and cooked through (internal temperature should be 165°F).
- Assemble the sandwich with spicy mayo, fried chicken, and pickles on brioche buns.
- Serve hot and enjoy!
Notes
For extra crispy chicken, double dredge by coating the chicken twice in buttermilk and flour. Store leftovers separately in an airtight container to retain freshness.
