- 2 pounds potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper, to taste
- Fresh dill or chives for garnish
Instructions
- Sauté the chopped onion and minced garlic over medium heat in a tablespoon of butter until soft, about 5 minutes.
- Add the diced potatoes and broth, bring to a boil, then simmer until the potatoes are tender, about 20-25 minutes.
- Puree the soup with an immersion blender until smooth.
- Stir in heavy cream and season with salt and pepper, simmer for an additional 5-10 minutes.
- Serve garnished with fresh dill or chives.
Notes
Let the soup cool completely before storing leftovers. It can be refrigerated for up to 5 days or frozen for 3 months.
