- 1 Cup Unsalted Butter, at room temperature
- 1.5 Cups Cane Sugar
- 1 tbsp Vanilla Extract
- 2 Egg Whites
- 2 Whole Eggs
- 1/3 Cup Rainbow Sprinkles
- 0.75 Cups Unsalted Butter, Room Temperature (for frosting)
- 250g Cream Cheese, softened
- 0.5 Cup Maple Syrup
- 2 tsp Vanilla Extract
- 1 tsp Beetroot Powder (optional)
Instructions
- Preheat the Oven: Heat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine Dry Ingredients: Whisk together the all-purpose and spelt flour, baking powder, baking soda, and salt. Set aside.
- Mix Wet Ingredients: Whisk together the sour cream and milk until smooth.
- Cream Butter and Sugar: Beat the softened butter and cane sugar until light and fluffy, about 3-5 minutes.
- Add Eggs and Vanilla: Incorporate the vanilla extract and add the egg whites and whole eggs, one at a time, mixing well after each addition.
- Incorporate Ingredients: Alternately add the dry and wet ingredients to the butter mixture, beginning and ending with the dry. Mix until just combined.
- Fold in Sprinkles: Gently fold in rainbow sprinkles to distribute evenly throughout the batter.
- Bake: Divide the batter between the prepared pans and bake for 30-35 minutes, until a toothpick comes out clean.
- Cool Cakes: Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- Make Frosting: Whip the room temperature butter and cream cheese until smooth; gradually add maple syrup and vanilla, beating until fluffy.
- Assemble the Cake: Spread frosting on top of one cake layer, stack the second layer on top, and frost the top and sides.
- Decorate: Add more sprinkles on top, chill for 30 minutes before serving for easier slicing.
