- 3 cups fresh pineapple, chopped (about 1 medium pineapple)
- 1/2 cup coconut milk (full-fat for creaminess)
- 2 tbsp honey or agave syrup (adjust to taste)
- 1 tbsp lime juice
- 1/4 tsp vanilla extract (optional)
- Pinch of salt
Instructions
- Blend ingredients: In a blender, combine pineapple, coconut milk, honey, lime juice, vanilla, and salt. Blend until smooth.
- Strain (optional): For a smoother texture, strain mixture through a fine-mesh sieve to remove pulp.
- Fill molds: Pour mixture into popsicle molds, leaving 1/4 inch at the top for expansion.
- Add sticks: Insert popsicle sticks and freeze for 1 hour, then remove and swirl sticks to prevent sticking.
- Freeze solid: Return to freezer for at least 4-6 hours, or until completely firm.
- Unmold: To release, briefly run molds under warm water before pulling out popsicles.
Notes
- For layered popsicles, alternate pineapple mixture with plain coconut milk before freezing.
- Add chunks of fresh pineapple to molds before pouring mixture for texture.
- If using canned pineapple, opt for juice-packed (not syrup) and reduce added sweetener.
- Store in freezer for up to 2 months in an airtight container.
