- 2 1/4 pounds ground ham (precooked)
- 3/4 pound ground pork
- 2 large eggs
- 2 tablespoons yellow mustard
- 1/2 cup ketchup
- 1 medium onion, chopped
- 1 1/2 cups graham cracker crumbs
- 1/2 cup 2% milk
- 1/2 tablespoon paprika
- 1 1/2 cups light brown sugar
- 1/2 cup white vinegar
- 1 teaspoon yellow mustard (for glaze)
- 8 ounces crushed pineapple (with juice)
Instructions
- Preheat the oven to 350ºF and spray a 9×13 baking pan with non-stick cooking spray.
- In a large mixing bowl, combine ground ham, ground pork, eggs, yellow mustard, ketchup, chopped onion, graham cracker crumbs, and milk. Mix until well incorporated.
- Shape the mixture into a loaf in the baking pan.
- Sprinkle paprika on top.
- Bake for 20 minutes.
- In a saucepan, combine light brown sugar, white vinegar, yellow mustard, and crushed pineapple. Cook until boiling, then boil for 1 minute and remove from heat.
- Brush the glaze over the loaf after 20 minutes of baking.
- Return the loaf to the oven and bake for an additional 70 minutes, basting every 20 minutes.
- Ensure the internal temperature reaches 165ºF.
- Let the loaf rest for 10 minutes before slicing and serve warm with remaining glaze.
Notes
Store leftover ham loaf in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. For extra flavor, let the mixture sit for a few minutes before baking.
