- 2 Chicken Breasts
- 1 Cup Fresh Pineapple, Diced
- 1 Tablespoon Olive Oil
- 1 Teaspoon Paprika
- 1 Teaspoon Garlic Powder
- Salt and Pepper to Taste
- Corn or Flour Tortillas
- Chopped Cilantro for Garnish
- Lime Wedges for Serving
Instructions
- Preheat the grill to medium-high heat (375°F – 400°F).
- In a bowl, marinate chicken with olive oil, paprika, garlic powder, salt, and pepper for at least 30 minutes.
- Grill the marinated chicken for 6-8 minutes on each side until internal temperature reaches 165°F.
- Let the chicken rest for a few minutes, then slice into thin strips.
- Warm tortillas on the grill for about 1 minute on each side.
- Assemble tacos by placing grilled chicken strips and diced pineapple on each tortilla.
- Garnish with chopped cilantro and serve with lime wedges.
Notes
Marinate chicken a day in advance for best flavor. Can substitute chicken with shrimp or firm tofu for variations.
