Description

Delicious Pineapple Chicken Tacos combining grilled chicken and fresh pineapple for a tropical flavor experience.


Ingredients

  • 2 Chicken Breasts
  • 1 Cup Fresh Pineapple, Diced
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Paprika
  • 1 Teaspoon Garlic Powder
  • Salt and Pepper to Taste
  • Corn or Flour Tortillas
  • Chopped Cilantro for Garnish
  • Lime Wedges for Serving

Instructions

  1. Preheat the grill to medium-high heat (375°F – 400°F).
  2. In a bowl, marinate chicken with olive oil, paprika, garlic powder, salt, and pepper for at least 30 minutes.
  3. Grill the marinated chicken for 6-8 minutes on each side until internal temperature reaches 165°F.
  4. Let the chicken rest for a few minutes, then slice into thin strips.
  5. Warm tortillas on the grill for about 1 minute on each side.
  6. Assemble tacos by placing grilled chicken strips and diced pineapple on each tortilla.
  7. Garnish with chopped cilantro and serve with lime wedges.

Notes

Marinate chicken a day in advance for best flavor. Can substitute chicken with shrimp or firm tofu for variations.
