Ingredients

- 2 cups shredded chicken (rotisserie or poached)
- 1 cup grapes (red or green, halved)
- 1 cup crushed pineapple (canned or fresh)
- 1/2 cup sliced or chopped almonds (toasted optional)
- 1/4 cup chopped green onions
- 1/2 cup creamy mayonnaise (or Greek yogurt)
- Salt and pepper to taste
Instructions
- Prepare your chicken: If using raw chicken, poach it for about 15-20 minutes until fully cooked. Let it cool, then shred it.
- Chop your veggies and fruit: Wash grapes and slice them in half. Measure out the crushed pineapple and chop green onions and almonds.
- Combine the ingredients: In a large bowl, combine the shredded chicken, halved grapes, crushed pineapple, chopped almonds, and sliced green onion.
- Add the dressing: Mix in the creamy mayonnaise and adjust the amount based on preference. Season with salt and pepper.
- Chill and serve: Allow the salad to chill for at least an hour in the fridge. Serve chilled or at room temperature.
Notes
This salad can be stored in an airtight container in the refrigerator for up to 4 days. Leftovers can be used in wraps or on greens.
