- 1/3 cup Pineapple Juice

- 1 tsp Cornstarch
- 1 tbsp Water
- 1.5 cups Cooked Rice
- 1 cup Pineapple Chunks
- 1/2 whole Red Bell Pepper (Diced)
- 1/4 cup Green Onions (Chopped)
- Sesame seeds (For serving)
- Crushed red pepper (Optional)
Instructions
- Prepare Your Ingredients: Gather all your ingredients first to streamline the process. Chop your bell pepper and green onions, and set them aside.
- Sauté the Chicken: In a large skillet, heat your oil over medium-high heat. Once hot, add the chicken breasts and cook until golden brown and cooked through, about 5-7 minutes.
- Add Garlic: After the chicken is cooked, add the minced garlic and sauté for an additional minute until fragrant.
- Make the Sauce: In a small bowl, mix soy sauce, pineapple juice, honey or brown sugar, rice vinegar, cornstarch mixed with water, and a tablespoon of additional water. Stir until thoroughly combined.
- Combine with Chicken: Pour this sauce over the chicken in the skillet. Stir to coat the chicken evenly, and let the sauce thicken for 2-3 minutes.
- Add Rice and Veggies: Fold in the cooked rice, pineapple chunks, and diced red bell pepper. Stir carefully to combine everything and coat each bit with that delicious sauce. Cook for another 2-3 minutes until heated through.
- Garnish and Serve: Remove from heat, then sprinkle with green onions and sesame seeds. For an added zing, you can toss a few crushed red pepper flakes on top for extra spice!
