Instructions
- Preheat your oven to 350°F (175°C). Grease two 8-inch round cake pans, then line the bottoms with parchment paper to prevent sticking.
- Whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a large bowl until well combined.
- Beat together the granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth and fluffy—about 3 minutes.
- Fold in the finely grated carrots and crushed pineapple into the wet mixture.
- Add the dry ingredients to the wet mixture gradually, stirring just until no streaks of flour remain.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for about 10 minutes, then carefully invert them onto wire racks to cool completely.
- Beat the softened cream cheese and butter until creamy, then gradually add powdered sugar and vanilla extract, beating until smooth.
- Assemble by placing one cake layer on a serving plate, spreading frosting on top, adding the second layer, and frosting the top and sides.
