Description

Delicious and fluffy twice-baked potatoes filled with cheese, bacon, and green onions. A comforting dish perfect for any occasion.


Ingredients

Scale
  • 4 medium Russet potatoes
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup milk or half and half, warmed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese, divided
  • 4 slices cooked bacon, crumbled (optional)
  • 2 tablespoons chopped green onions, divided

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean under running water. Pat them dry and pierce each potato several times with a fork.
  3. Bake the potatoes directly on the oven rack for 50 to 60 minutes, until tender.
  4. Remove and cool for about 5 minutes, then cut each potato lengthwise.
  5. Scoop out the flesh, leaving a thin border for support.
  6. In a bowl, mash the potato flesh with the butter, warm milk, salt, and pepper until fluffy.
  7. Fold in 1/2 cup cheese, half the bacon, and half the green onions.
  8. Stuff the mixture back into the skins, mounding it slightly.
  9. Top with remaining cheese, bacon, and green onions. Bake for an additional 15 to 20 minutes until bubbly.
  10. Serve hot and enjoy!

Notes

For extra gooey cheese, cover with foil during the second bake. Customize with your favorite ingredients!
