Delicious and fluffy twice-baked potatoes filled with cheese, bacon, and green onions. A comforting dish perfect for any occasion.

- 4 medium Russet potatoes
- 2 tablespoons unsalted butter, softened
- 1/4 cup milk or half and half, warmed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese, divided
- 4 slices cooked bacon, crumbled (optional)
- 2 tablespoons chopped green onions, divided
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean under running water. Pat them dry and pierce each potato several times with a fork.
- Bake the potatoes directly on the oven rack for 50 to 60 minutes, until tender.
- Remove and cool for about 5 minutes, then cut each potato lengthwise.
- Scoop out the flesh, leaving a thin border for support.
- In a bowl, mash the potato flesh with the butter, warm milk, salt, and pepper until fluffy.
- Fold in 1/2 cup cheese, half the bacon, and half the green onions.
- Stuff the mixture back into the skins, mounding it slightly.
- Top with remaining cheese, bacon, and green onions. Bake for an additional 15 to 20 minutes until bubbly.
- Serve hot and enjoy!
Notes
For extra gooey cheese, cover with foil during the second bake. Customize with your favorite ingredients!
