  • 4 garlic cloves, halved (optional)
  • 1 onion, sliced (optional)

Instructions

  1. Prep: Remove the roast from the fridge 1–2 hours before cooking and pat it dry.
  2. Season: Rub the roast with olive oil or softened butter, then coat generously with salt, pepper, garlic powder, and onion powder.
  3. Sear: Preheat the oven to 450°F (230°C) and roast for about 20 minutes.
  4. Slow Roast: Lower oven temperature to 325°F (165°C) and cook until desired doneness, about 15–20 minutes per pound.
  5. Rest: Transfer to a cutting board, tent with foil, and let it rest for 25–30 minutes.
