Instructions
- Prep: Remove the roast from the fridge 1–2 hours before cooking and pat it dry.
- Season: Rub the roast with olive oil or softened butter, then coat generously with salt, pepper, garlic powder, and onion powder.
- Sear: Preheat the oven to 450°F (230°C) and roast for about 20 minutes.
- Slow Roast: Lower oven temperature to 325°F (165°C) and cook until desired doneness, about 15–20 minutes per pound.
- Rest: Transfer to a cutting board, tent with foil, and let it rest for 25–30 minutes.
- Slice & Serve: Carve and serve, drizzled with resting juices.
