Ingredients

- 1/2 cup old-fashioned rolled oats
- 1/3 cup plain Greek yogurt
- 1/2 cup unsweetened almond milk
- 1 tbsp unsweetened cocoa powder
- 1 1/2 tsp instant espresso powder
- 1/2 tsp peppermint extract
- 1 tbsp maple syrup
- 1 tbsp mini chocolate chips
- 1 tbsp crushed peppermint candy (optional)
- Pinch of salt
Instructions
- In a jar or bowl, add rolled oats, Greek yogurt, and almond milk.
- Sprinkle in cocoa powder, instant espresso powder, and a pinch of salt. Stir to combine.
- Pour in peppermint extract and maple syrup. Stir until fully combined.
- Mix in mini chocolate chips.
- Cover and refrigerate for at least 6 hours, preferably overnight.
- Before serving, stir and top with extra chocolate chips and crushed peppermint candy if desired.
Notes
For the best consistency, let your Greek yogurt come to room temperature before mixing. Store in the fridge for up to 5 days.
