Delicious soft and chewy cookies filled with peppermint candy kisses, perfect for the holiday season.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup peppermint candy kisses, unwrapped
- 1/2 cup crushed peppermint candies for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add to the creamed mixture, mixing until just combined.
- Scoop and drop balls of dough onto prepared baking sheets, leaving space between each.
- Bake for 10-12 minutes until cookies are set but still soft in the center.
- Press one peppermint candy kiss into each cookie as soon as they come out of the oven.
- Allow to cool slightly on the baking sheet, then transfer to a wire rack to cool completely.
- Sprinkle with crushed peppermint candies while warm for garnish.
- Serve and enjoy!
