Ingredients

  • ½ cup unsalted butter, melted

  • ½ cup packed brown sugar

  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • ¾ cup semi-sweet chocolate chips
  • ¼ cup crushed candy canes or peppermint candies

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, combine melted butter, granulated sugar, and brown sugar. Beat in the eggs one at a time, then add the vanilla and peppermint extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. For a fudgier texture, chill the dough in the refrigerator for about 30 minutes.
  6. Using a cookie scoop, place dough on baking sheets and optionally top with more chocolate chips and crushed candy canes.
  7. Bake for 10-12 minutes, until edges are set and centers are soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
