Ingredients

- 2 large eggs
- 3 tablespoons sugar
- 2/3 cup whole milk
- 1/3 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
- 1 pinch of salt
- 2 small-medium ripe pears
- 1/2 tablespoon butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch skillet or baking dish with butter.
- In a large mixing bowl, whisk together the eggs and sugar until pale and frothy.
- Gradually add the milk, flour, vanilla extract, lemon zest, and salt, whisking until smooth.
- Layer the sliced pears in the prepared skillet.
- Pour the batter over the pears and bake for 35-40 minutes until set and golden on top.
- Allow to cool slightly before serving. Dust with powdered sugar if desired.
Notes
For a variation, try using apples or mixed berries instead of pears. Serve warm with whipped cream or ice cream.
