- 2 large eggs
- 1/2 cup milk (whole or dairy-free alternative)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the peanut butter and sugar until creamy and well-combined (about 2 minutes).
- Crack in the eggs, add the milk and vanilla extract, then mix until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Spoon the batter into each muffin cup, filling about 2/3 full.
- Bake for 15-20 minutes, until a toothpick comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
Notes
