Description

A rich and creamy peanut butter mousse filling that evokes nostalgia and is perfect for any occasion.


Ingredients

  • 1 cup creamy peanut butter (not natural or oily)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy whipping cream, cold
  • Optional: pinch of salt (if using unsalted peanut butter)

Instructions

  1. In a chilled mixing bowl, whip the heavy cream on medium-high speed until stiff peaks form—about 2-3 minutes. Place whipped cream in the refrigerator.
  2. In a separate large bowl, beat the softened cream cheese and peanut butter together on medium speed until smooth, about 2-3 minutes. Add the sifted powdered sugar and vanilla extract and beat until well combined.
  3. Gently fold one-third of the whipped cream into the peanut butter mixture. Then fold in the remaining whipped cream in two additions, maintaining airiness.
  4. For the best texture, refrigerate the mousse for 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. This mousse can be made a day in advance.
