- 3 cups old-fashioned rolled oats
- 3/4 cup natural peanut butter
- 1/3 cup honey or maple syrup
- 1/2 cup mini chocolate chips (optional)
- 2 whole eggs (or use a flax egg for a vegan-friendly alternative)
- Pinch of salt (omit if using salted peanut butter)
- Chopped walnuts, pecans, or almonds (optional)
- Chia, sunflower, or pumpkin seeds (optional)
- Dried fruit like cranberries or raisins (optional)
Instructions
- Preheat your oven to 350℉.
- In a large bowl, combine all ingredients and mix well. If your peanut butter is solid, heat it for 10-15 seconds to make it easier to blend.
- Line a 9×9 inch baking dish or pan with parchment paper.
- Transfer the mixture to your prepared dish and press it firmly into the pan.
- Bake for 15-17 minutes or until the center is set, and the edges just begin to brown.
- Remove from the oven and let it cool completely before cutting into 16 squares.
Notes
Store in an airtight container at room temperature for up to a week, or refrigerate for longer shelf life. These bars can also be frozen for up to three months.
