  • 1/2 cup (119 g) heavy whipping cream, at room temperature
  • 1/2 cup (129 g) creamy peanut butter, melted
  • 1/4 cup (50 g) light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 cup (64.5 g) creamy peanut butter, melted (for topping)
  • 1 ripe banana, sliced (for topping)
  • Peanuts, chopped (for topping)
  • Maple syrup, for serving (optional)

Instructions

  1. Prep the Baking Dish: Spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Build the Layers: Add half of the bread and half of the diced bananas in an even layer.
  3. Make the Egg Mixture: In a large bowl, whisk together the eggs, milk, heavy cream, peanut butter, brown sugar, vanilla, cinnamon, and salt until smooth.
  4. Combine: Pour the egg mixture over the bread and bananas, pressing down gently. Cover and refrigerate overnight.
  5. Pre-Bake Preparation: Remove from fridge and let sit at room temperature for 20-30 minutes as the oven preheats to 350°F (175°C).
  6. Baking: Cover with foil and bake for 30 minutes; then remove foil and bake for an additional 15-20 minutes.
  7. Cool Down: Let cool slightly before serving.
  8. Serve with Love: Top with melted peanut butter, banana slices, and peanuts. Serve warm with maple syrup on the side.
