Ingredients

  • 1 cup (258 g) creamy or crunchy peanut butter
  • 1 cup (200 g) granulated sugar
  • 1 large egg, room temperature
  • 3 packages (8 ounces each) cream cheese, softened
  • 3/4 cup (150 g) granulated sugar
  • 2 cups (476 g) heavy whipping cream
  • 1 package (1.7 ounces) banana cream instant pudding mix
  • 2 medium bananas, sliced
  • Banana slices, for garnish
  • Whipped cream, for garnish
  • Chopped peanuts, for garnish
  • 1/4 cup (60 g) creamy peanut butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the crust by mixing peanut butter, granulated sugar, and egg until combined, then pressing into a 9-inch pie pan and baking for 13-14 minutes.
  3. Prepare the filling by beating cream cheese with 3/4 cup sugar until smooth, then whisking heavy cream and pudding mix separately and combining them.
  4. Layer banana slices on the cooled crust.
  5. Add the creamy filling on top of the bananas.
  6. Chill the pie in the refrigerator for at least 1 hour.
  7. Garnish with sliced bananas, whipped cream, chopped peanuts, and a drizzle of melted peanut butter before serving.

Notes

For added depth of flavor, consider toasting your peanuts lightly before garnishing. Store in the fridge for up to 3 days.
