Description

A luscious Peach Upside-Down Cake with caramelized peaches and a moist, buttery cake that melts in your mouth.


Ingredients

  • 4 ripe peaches, sliced
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons bourbon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter and brown sugar in a cast iron skillet over medium heat until bubbly.
  3. Caramelize the peaches in the skillet for about 5-7 minutes until golden and fragrant.
  4. Layer the caramelized peaches in the bottom of a greased baking pan.
  5. Whisk together flour, baking powder, salt, and cinnamon in a bowl.
  6. Beat eggs and granulated sugar in another bowl until light and fluffy.
  7. Incorporate milk and bourbon into the egg mixture, then fold in dry ingredients.
  8. Pour the batter over the peaches in the baking pan.
  9. Bake! for 35-40 minutes or until a toothpick comes out clean.
  10. Cool the cake for about 10 minutes before inverting onto a plate.
