- 4 ripe peaches, sliced
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup milk
- 2 tablespoons bourbon
Instructions
- Preheat your oven to 350°F (175°C).
- Melt butter and brown sugar in a cast iron skillet over medium heat until bubbly.
- Caramelize the peaches in the skillet for about 5-7 minutes until golden and fragrant.
- Layer the caramelized peaches in the bottom of a greased baking pan.
- Whisk together flour, baking powder, salt, and cinnamon in a bowl.
- Beat eggs and granulated sugar in another bowl until light and fluffy.
- Incorporate milk and bourbon into the egg mixture, then fold in dry ingredients.
- Pour the batter over the peaches in the baking pan.
- Bake! for 35-40 minutes or until a toothpick comes out clean.
- Cool the cake for about 10 minutes before inverting onto a plate.
