Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl until well combined.
  3. Crumble in the cold butter until the mixture resembles coarse crumbs, with some larger pea-sized pieces remaining.
  4. Fold in the diced peaches, ensuring they are evenly distributed without mashing them.
  5. Mix the heavy cream, egg, and vanilla extract in a separate bowl until smooth.
  6. Combine the wet ingredients into the dry ingredients and stir gently until just combined.
  7. Knead the dough lightly on a floured surface a few times until it holds together.
