Description

Peach Delight is an irresistible no-bake dessert featuring layers of creamy filling and a crumbly graham cracker crust, topped with peach jello and fresh peaches.


Ingredients

  • 2 cups finely crushed honey graham crackers
  • 1 tablespoon granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 blocks cream cheese, room temperature (8 oz each)
  • 1 cup confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 3 cups whipped topping, divided
  • 1 box peach jello mix (3 oz)
  • 1 can sliced peaches in fruit juice, drained and diced, divided

Instructions

  1. Preheat and prep: Start by prepping your baking dish. Line an 8×8-inch baking dish with parchment paper.
  2. Make the crust: In a medium bowl, mix graham crackers and sugar until combined.
  3. Incorporate butter: Pour in the melted butter and mix until everything is well-coated.
  4. Press the crust: Firmly press the mixture into the bottom of the baking dish.
  5. Cream cheese mixture: In a large bowl, use a hand mixer to beat the cream cheese, confectioners’ sugar, and vanilla until smooth (about 2 minutes).
  6. Fold in whipped topping: Gently fold in 2 cups of whipped topping until well combined.
  7. Divide the mixture: Split this mixture into two bowls. In one, add 1/4 cup of peach jello mix; gently mix until just combined.
  8. Add diced peaches: In the jello mix bowl, fold in 1 cup of diced peaches.
  9. Layer the mixture: Spread the peach mixture evenly on the crust, then pour the cream cheese mixture over it, followed by the remaining whipped topping.
  10. Chill: Place in the refrigerator and chill for at least 1 hour to let the flavors meld together.
  11. Serve: Once chilled, top with reserved diced peaches before slicing and serving.
