Description

A delightful Peach Crumb Cake that combines tender cake with a crunchy, buttery crumble, making it a perfect dessert for summer gatherings.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2/3 cup (133 g) granulated sugar
  • 5 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon kosher salt
  • 6 large eggs, room temperature
  • 1 cup (218 g) vegetable oil
  • 3 cans (15 ounces each) peaches in fruit juice, drained and diced
  • 1 cup (125 g) all-purpose flour (for crumble)
  • 1/2 teaspoon cinnamon
  • 1/3 cup (42 g) confectioners’ sugar
  • 1/2 cup (113 g) unsalted butter, melted
  • 1 cup (245 g) whole milk
  • 1/4 cup (57 g) unsalted butter
  • 1/4 cup (50 g) granulated sugar
  • 1 cup (125 g) confectioners’ sugar
  • 1 tablespoon whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9×13 inch baking dish with nonstick cooking spray and set it aside.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
  3. Add the eggs and oil to a separate small bowl, stirring until evenly mixed.
  4. Pour the egg and oil mixture into the flour mixture, mixing until just combined.
  5. Fold in the diced peaches gently until evenly distributed throughout the batter.
  6. Transfer the batter into the prepared baking dish, smoothing the top with a spatula.
  7. For the crumble, whisk together 1 cup flour, 1/2 teaspoon cinnamon, and 1/3 cup confectioners’ sugar in a bowl. Stir in the melted butter until a crumbly dough forms.
  8. Sprinkle the crumble topping evenly over the peach batter.
  9. Bake for 55–60 minutes or until a toothpick inserted in the center comes out mostly clean.
  10. In the last few minutes of baking, heat the milk, butter, and sugar in a small saucepan over medium heat until melted and dissolved.
  11. Remove the cake from the oven and poke 25-30 holes evenly across the top using a skewer.
  12. Pour the milk mixture over the cake.
  13. Let the cake cool completely in the baking dish.
  14. For the glaze, whisk together 1 cup confectioners’ sugar and 1 tablespoon milk until smooth. Drizzle over the cooled cake and serve!

Notes

Serve with a scoop of ice cream or whipped cream. Dust with powdered sugar and garnish with mint leaves for presentation.
