Description

Deliciously soft muffins filled with sweet peaches and topped with a crispy cinnamon sugar mixture, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Set it to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. Combine wet ingredients: In another bowl, beat the egg. Then add the milk, melted butter, and vanilla extract, stirring until combined.
  4. Combine both mixtures: Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  5. Add peaches: Fold in the diced fresh peaches.
  6. Fill muffin tins: Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Prepare topping: In a small bowl, mix brown sugar and ground cinnamon, then sprinkle over the tops of the muffins.
  8. Bake: Place the muffin tin in the oven and bake for 18-22 minutes.
  9. Cool slightly: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack.

Notes

Store leftover muffins in an airtight container at room temperature for 2-3 days or in the refrigerator for up to a week. Can also be frozen for up to 3 months.
