Description

Delicious peach cobbler transformed into crispy egg rolls, drizzled with silky Vanilla Bean Sauce.


Ingredients

  • 4 ripe peaches, peeled and diced
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1012 egg roll wrappers
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 tsp vanilla bean paste

Instructions

  1. Prepare the Filling: In a medium saucepan over medium heat, combine the diced peaches, brown sugar, cinnamon, and nutmeg. Stir gently until the peaches are softened and juicy, about 5-7 minutes.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface, filling the center with about two tablespoons of the peach mixture. Moisten the edges with water, fold the sides over, and roll tightly to seal.
  3. Fry the Egg Rolls: Heat oil in a heavy-bottomed cast iron skillet over medium heat. Once hot, carefully place a few egg rolls in the oil. Fry until golden brown on each side, about 2-3 minutes.
  4. Make the Vanilla Bean Sauce: In a saucepan, combine the heavy cream, sugar, and vanilla bean paste. Simmer gently, stirring until thickened, about 5-7 minutes.
  5. Serve: Drizzle the warm Vanilla Bean Sauce over the fried egg rolls and garnish with fresh mint if desired.

Notes

For a vegan option, use coconut milk for the Vanilla Bean Sauce and rice paper for the wrappers. Can be baked instead of fried.
