Delicious peach cobbler transformed into crispy egg rolls, drizzled with silky Vanilla Bean Sauce.

- 4 ripe peaches, peeled and diced
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 10–12 egg roll wrappers
- 1 cup heavy cream
- 1/4 cup sugar
- 1 tsp vanilla bean paste
Instructions
- Prepare the Filling: In a medium saucepan over medium heat, combine the diced peaches, brown sugar, cinnamon, and nutmeg. Stir gently until the peaches are softened and juicy, about 5-7 minutes.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface, filling the center with about two tablespoons of the peach mixture. Moisten the edges with water, fold the sides over, and roll tightly to seal.
- Fry the Egg Rolls: Heat oil in a heavy-bottomed cast iron skillet over medium heat. Once hot, carefully place a few egg rolls in the oil. Fry until golden brown on each side, about 2-3 minutes.
- Make the Vanilla Bean Sauce: In a saucepan, combine the heavy cream, sugar, and vanilla bean paste. Simmer gently, stirring until thickened, about 5-7 minutes.
- Serve: Drizzle the warm Vanilla Bean Sauce over the fried egg rolls and garnish with fresh mint if desired.
Notes
For a vegan option, use coconut milk for the Vanilla Bean Sauce and rice paper for the wrappers. Can be baked instead of fried.
