Description

Delightful cheesecake bars featuring layers of creamy cheesecake and sweet peaches, all nestled in a buttery graham cracker crust.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups peaches, peeled and sliced
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine graham cracker crumbs and melted butter in a medium bowl. Press the mixture firmly into the bottom of the prepared baking dish, creating a uniform crust.
  3. Beat cream cheese and sugar in a large bowl until smooth and creamy. Add vanilla and eggs, mixing until fully incorporated.
  4. Pour the cream cheese mixture over the crust, smoothing it out evenly.
  5. Mix sliced peaches, cinnamon, nutmeg, and brown sugar in another bowl. Toss gently to coat the peaches, then pour this mixture over the cheesecake layer.
  6. Bake for 35-40 minutes, or until the cheesecake is set with a slight jiggle in the center. Let cool completely before refrigerating for at least 2 hours.
  7. Slice into bars, serve chilled, and enjoy!

Notes

For a richer texture, use high-fat Philadelphia cream cheese and fresh local peaches when in season.
