- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups peaches, peeled and sliced
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Combine graham cracker crumbs and melted butter in a medium bowl. Press the mixture firmly into the bottom of the prepared baking dish, creating a uniform crust.
- Beat cream cheese and sugar in a large bowl until smooth and creamy. Add vanilla and eggs, mixing until fully incorporated.
- Pour the cream cheese mixture over the crust, smoothing it out evenly.
- Mix sliced peaches, cinnamon, nutmeg, and brown sugar in another bowl. Toss gently to coat the peaches, then pour this mixture over the cheesecake layer.
- Bake for 35-40 minutes, or until the cheesecake is set with a slight jiggle in the center. Let cool completely before refrigerating for at least 2 hours.
- Slice into bars, serve chilled, and enjoy!
Notes
For a richer texture, use high-fat Philadelphia cream cheese and fresh local peaches when in season.
