Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine graham cracker crumbs and melted butter in a medium bowl. Press the mixture firmly into the bottom of the prepared baking dish, creating a uniform crust.
  3. Beat cream cheese and sugar in a large bowl until smooth and creamy. Add vanilla and eggs, mixing until fully incorporated and silky.
  4. Pour the cream cheese mixture over the crust, smoothing it out evenly.
  5. Combine sliced peaches, cinnamon, nutmeg, and brown sugar in another bowl. Toss gently to coat the peaches, then pour this mixture over the cheesecake layer, allowing it to sink slightly.
  6. Bake for 35-40 minutes or until the cheesecake is set, with a slight jiggle in the center. Let cool completely before refrigerating for at least 2 hours.
