A wonderfully tender dessert that combines a moist yellow cake base infused with fresh peach flavor, topped with a rich brown sugar frosting.


Ingredients

  • 1 (15-oz) box yellow cake mix
  • 2 (3-oz) boxes peach Jell-O (not prepared)
  • 4 eggs
  • 1 cup vegetable oil
  • 1 (16-oz) bag frozen peaches (do not thaw)
  • 1/2 cup salted butter (1 stick)
  • 2 cups brown sugar (packed)
  • 2/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • Ice water for an ice bath

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch cake pan thoroughly.
  3. In a large bowl, beat the cake mix, peach Jell-O, eggs, and oil until smooth, about 2-3 minutes.
  4. Cut frozen peaches into smaller pieces and fold them into the batter.
  5. Pour the batter into the greased pan and bake for 40-45 minutes.
  6. Let the cake cool completely on a wire rack.
  7. In a pot, combine butter, brown sugar, and heavy cream. Stir and bring to a boil, then set a timer for 1 minute.
  8. Remove from heat and stir in vanilla, then cool in an ice bath, beating until thick but pourable.
  9. Frost the cooled cake with brown sugar frosting.

Store leftover cake in an airtight container for up to 3 days at room temperature or up to a week in the fridge.
