- 2 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 tablespoon granulated sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 1 can (15 ounces) canned peaches in fruit juice, drained and chopped
- 2 cups buttermilk
- 1/2 cup unsalted butter, melted
- 1/4 cup light brown sugar, packed
- 1/4 teaspoon ground cinnamon (for sprinkling on top)
- 2 tablespoons granulated sugar (for sprinkling on top)
- 1/4 teaspoon ground cinnamon (for sprinkling on top)
Instructions
- Preheat your oven to 450 degrees F (230 degrees C).
- In a medium bowl, whisk together the flour, baking powder, granulated sugar, ½ teaspoon cinnamon, and kosher salt.
- Pour in the buttermilk and stir gently until mostly combined.
- Gently fold in the drained and chopped peaches.
- In a small bowl, combine the melted butter, brown sugar, and remaining ¼ teaspoon cinnamon.
- Pour the melted butter mixture into an 8×8-inch baking dish and spread the dough on top.
- In another small bowl, combine 2 tablespoons granulated sugar and ¼ teaspoon ground cinnamon, then sprinkle 1 tablespoon over the dough.
- Using a knife, gently score the unbaked dough into 9 equal squares.
- Bake for 30-35 minutes until golden brown.
- Once done, sprinkle the remaining cinnamon sugar mixture on top (optional).
